Sweet Pork Burritos

2 1/2 pounds pork (any cut)
salt, to taste
Pepper, to taste
garlic salt, to taste
1 package (10 count) flour tortillas
2 (15 oz) cans mild green chili sauce, divided
1/2 cup brown sugar
1 (15 oz) can black beans well drained
1 bunch cilantro, chopped
1/3 pound Monterey jack cheese grated

Garnishes:
chopped tomatoes
salsa
lettuce
sour cream
guacamole

Cut pork into large cubes and place in a slow cooker with 1/3 cup water. season with salt and pepper and garlic salt. cook on high temp. for 4 hours or low for 8, until meat is well done. remove from cooker and drain. shred meat and place in bowl. stir in 1/2 cup green chili sauce and brown sugar.
Heat oven to 350 degrees. Spray a 9 by 13 inch baking dish with non stick cooking spray. warm the tortillas in a microwave to make them easier to roll.
Pour 1/2 cup green chili sauce into prepare pan. place 1/3 cup meat mixture down the middle of each tortilla. sprinkle 1 to 2 tablespoons of black beans and 1 to 2 teaspoons cilantro. roll burrito and place seam-side down in baking dish. repeat with remaining tortillas. Pour 1 1/2 to 2 cups of green chili sauce over burritos and sprinkle with Monterey jack cheese.
Cover with foil and bake 25 to 30 mins, or until cheese is melted and burritos are warmed through.

Cafe Rio Style Salad

Chicken breasts (plan on 1 large chicken breast per two people)
Lawry's season salt
2 cans Swanson's chicken broth
1 pkg. Mccormick dry taco seasoning

Generously sprinkle Lawry's season salt on both sides of chicken breasts. BBQ on grill untill just done. slice chicken into bite size pieces. Put in crockpot with chicken broth and taco seasoning. simmer in crockpot for a few hours. very tender and flavorful.

Salad ingredidents
Chicken Breasts (see above)
Flour Tortillas
2 heads romaine lettuce, shredded into 1/2 inch slices
2 cans black beans
1 1/2 cups rice (made with 1 can chicken broth and 1 can Rotel Mexi-Diced tomatoes
Grated cheese
Salsa
Tortilla chips or strips
Creamy tomatillo Dressing

Tomatillo Dressing ( Most Important part)
1 cup Mayo
1/2 cup buttermilk
1 package dry Hidden valley Ranch Dressing
2 Cloves garlic
1 Cup Cliantro
3 Tomatillos ( small green tomatoes- Albertsons carries them in the produce section)

Husk and wash the tomatillos. Mix all dressing ingredients in blender or food processor until well blended. Set up Buffet in this order: tortillas, rice, beans, chicken, cheese, lettuce, salsa, dressing, and tortilla chips. You can also add other things like Guacamole, chopped onion, chopped olive.

Strawberry Breakfast Pizza

1 (1 1/2 oz) package refrigerated biscuits (10)
1 Orange
2 (3 oz) packages cream cheese (soft)
4 tablespoons honey
1 pint fresh strawberries stemmed & halved

Preheat oven to 400
Stack 2 biscuits and roll out to a 6" circle- 1/8" thick.
Place on ungreased baking sheet- prick all over with fork. Repeat.
Bake biscuits until lightly brown, 6-8 mins.

Loosen biscuits and cool slightly

Mean while Grate orange peal into a bowl with cream cheese, honey. blend.
set aside.
Juice orange into bowl, add strawberries and another 2 tablespoons honey.

Increase oven to 425- Spread biscuits with cream cheese to 1/2 inch of edges- divide equally.
Bake just until edge of cream cheese is brown lightly. take out and top with strawberry mixture.
Serve immediately
