Freezer Jam

you'll need:
.four 1-lb containers of fresh straberries or six 6-oz containers of blackberries or raspberries
. 1.5 cups of sugar
. 1 package ball frezzer jam pectin
. frezzer safe canning jars or small tubber ware containers

Wash, stem and slice berries, then place in a shallow baking pan

use a masher to crush berries ( consistency will depend on how chuncky you like your jam)

in a seprate bowl, mix together pectin and sugar
add mashed berries into mixture and stir for 3 mins
scoop jam into small freezer safe jars( 4-6 oz size)
let jam set for 30 mins, then store in your freezer

can store in freezer for up to one year or in refrigerator for 1 month

Banana Cream Pie

3/4 cup white sugar
1/3 cup all purpose flour
1/4 teaspoon salt
2 cups milk
3 egg yolks
2 tablespoon butter'
1 1/4 teaspoon vanilla extract
1 (9inch) pie crust
4 bananas sliced


1. in a saucepan, combine the sugar, flour and salt. add milk gradually while stirring gently.
cook over a medium heat, stirring constantly, until the mixture is bubbly. keep stirring and cook for 2 more minutes and then remove from burner.
2. stir a small quantity of the hot mixture into teh beaten egg yolks and immediately add egg yolk mixture into the rest of the hot mixture. cook for 2 more minutes. remember to keep stirring. remove the mixture from the stove and add butter and vanialla. stir until the whole thing has a smooth consistency
3.slice bananas into the cooled baked pastry shell and top with pudding mixture
4. bake at 350 for 12-15 mintues and let cool for one hour!

peanut butter cups

1 cup gramcraker crumbs
1 1/2 cups peanut butter
1 1/2 cup chocolate chips
1 1/2 stick butter(melted)
2 cup powdersuger

combine all ingredients(except chocolate chips) and press into a 9*13 inch pan. melt the chocolate chips and spread on top. refrigerate until chocolate is almost set, abut 10 mins cut into small squares.

( when I made mine it didnt set right so it didnt look pretty but still tasted yummy!)

Fudge

3 cups semisweet chocolate chips
1 (14 ounce) can sweetened condensed milk
1/4 cup butter
1 cup chopped nuts ( optional)


1. place chocolate chips, sweetened milk & butter in a large microwave bowl. Zap in microwave on medium until chips are melted, about 3-5 mins. stirring once or twice during cooking, stir in nuts if wanted.
pour into a well greased 8*8 inch glass baking dish and refrigerate until set. :)

Blackberry Pie

1 box of pillsbury uncooked pie crust ( or make your own- I have doen it both ways)
4 cups fresh blackberries
3 tablespoons all purpose flour
1 cup white sugar
1 tablespoon lemon juice
1 tablespoon butter

*preheat oven @ 450
*line a 9 inch pie pan with 1 on the pie dough crust. save other for top. let chill while preparing the blackberries
*combine blackberries, flour, sugar, and lemon juice. spoon mixture into pie shell and dot with the butter. cover with top pie crust and slash in several places
*bake for 15 mins, then reduce heat to 350 and continue baking for 35 mins or until browned.

Great Bread recipe

3 cups warm water
1 & 1/2 tablespoons yeast
1/4 cup sugar or honey
6-8 cups flour ( i do about 4 cups wheat and 4 cups white, find a mix that works for your family)
1 teaspoon salt
1/8 cup oil



Put water in your Kitchen-aide mixer
sprinkle yeast over top
then sugar over top
then salt & oil over that
turn on mixer and start adding the flour...I usually add 6 cups of flour and then continue to add the flour until the dough becomes not as sticky. The dough is ready when it forms a ball without sagging and quickly springs back when poked.
- Can also kneed it by hand if you don't have a mixer


Let raise in a bowl bigger then your dough, cover with some saran wrap sprayed with some oil to help the dough not stick. It usually takes 35-55 mins to raise, it needs to double in size. and then punch down , reform and place in bread pans and let raise again. then Bake. 

Bake at 350 for 30 minutes
after cooked remove from oven and let cool 5 mins then remove from pans and place on a cooling rack.
and enjoy! 

Cinnamon-Raisin Bread
1/2 cup raisins
filling:
1/4 cup sugar
3/4 cup cinnamon
1 egg beaten with 2 table spoons water
 
 I started doing one regular bread loaf and one cinnamon raisin loaf, it only takes a few extra steps
after the dough has raised the first time, divide the dough in half. use the one dough half for regular bread loaf...so just follow the above recipe steps. for the other half: 
put ur extra dough back into the mixer and kneed in the raisins. take out and place in a bowl and let dough raise. after it raise. roll out on the counter .
(combine cinnamon and sugar into a bowl & beat the egg water in a second bowl.)
brush the entire surface of the dough with egg wash. then  sprinkle with cinniamon sugar mixture. then roll up the dough to form a loaf and place in bread pan.
Let the dough raise
then bake
 350 for 30 mins


You can freeze loaves for up to 3 months.


if you wanted to do 2 loaves of the cinnamon raisin the filling measurements would be:
1/2 sugar
1 1/2 cinnamon
1 large egg with 2 teaspoons water



We love this bread, It is so great that I stopped buying bread.
You can freeze half the dough, It makes 2 loafs. You can also use the dough for pizza. :)
