Chocolate Popcorn

1 lb brick of white chocolate
2-3 bags of popcorn ( depends on how much chocolate you like)
(you can add M&Ms- crushed mints- anything you like or sprinkles for the hoolidays)

Pop popcorn and get kernels out in a large bowl

Put chocolate in ziplock bag, hammer to break up

Put chocolate in glass bowl to melt. Microwave 1 minute at a time and stir, becareful not to burn. Then once it starts melting only do 30 sec at a time especially if your microwave cooks hot.

Pour chocolate over popcorn and stir- add anything else you would like at this time.

Pour chocolate popcorn on cookie sheet to cool and set up. Use Wax paper to save on washing pans.

Super soft sugar cookies!!

2 cups margarine
3 cups sugar
5 eggs
2 tsp vanilla
1/2 cup milk
1/2 tsp salt
1 tsp baking soda
5 tsp baking powder
7-8 cups flour
1/2-1 tsp almond extract

Mix all together. Bake @ 350 for 9-12 minutes. Underdone is better then overdone. Frost with any kind of frosting.

Pizza Dough

1 c. and 2 T. Hot tap water
2 T. Olive oil or vegetable oil
3 c. flour (enough so dough is not sticky, but can be rolled out and handled easily)
1 t. sugar
3 t. salt
2 ½ t. yeast
Make sure you add the Hot tap water, yeast and sugar together. Allow to grow 5 minutes. Then slowly add the flour one cup at a time until each cup as been incorporated, and add the salt after the first cup of flour. Touch dough to make sure it is soft and bouncy to the touch. Mix and let rise until it doubles in size. For more Italian flavor add basil and garlic powder to the dough. Roll out like regular pizza dough. Shape into any shape desired. Best to bake on cooking stones.

Top with pizza sauce, cheese, and what ever you want to put on it.

Yummy Cornbread

This goes great as a side to a soup, stew or mexican dish.



2 C Bisquick
3/4 C Sugar
1 t baking powder
1 square butter
1 C milk
2 T yellow corn meal
2 beaten eggs

Melt butter and cool. Mix other ingredients then add butter and mix well.
Bake in 8x8 or 9 inch round pan 30 minutes @ 350.  If you make them in a muffin pan, reduce time to 10-13 minutes. ~Alyssa

Best Fruit Salad Ever

You are supposed to use 6 cups of fruit, this is what I use...

1 can mandarin oranges
1 can pineapple tidbits
1 can sliced peaches (cut into small pieces)
1 pound of strawberries (I have used raspberries.)

2 Large boxes vanilla pudding
1 quart buttermilk
12 ounce tub cool whip

Mix together vanilla pudding and buttermilk. Mix in the coolwhip. Add the fruit.

Baked Ziti

1 pound sausage
3/4 pepperoni
1 onion chopped
1 clove garlic minced
1/4 cup chopped green pepper
14 ounces prego sauce
1 cup mozzarella cheese

Brown the sausage and pepperoni together and drain the grease. Cook onion and green pepper and garlic, put with meat. Add 1/2 cup grated Parmesan and prego sauce. Cook 2 cups of noodles. Mix everything together, put Pam in 9x13 pan and top with grated mozzarella. Bake for 25 minutes at 375.

Serve with salad and garlic bread and enjoy! ~Alyssa

Bread Dip

1 Cup real mayonnaise
3/4 Cup sour cream
1 bundle of green onions (diced)
2 pkgs. wafer ham (diced)
Salad Supreme seasoning (no specific amount...sprinkle to your own
taste) I typically use at least 1-2 Tbs, sometimes more.

mini pumpkin muffins

 Mini Pumpkin Muffins

4 eggs
2 cups sugar
1 1/2 cups vegetable oil
1 (15 oz) can pumpkin
3 cups flour *
2 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
2 cups semi-sweet chocolate chips (the mini ones are fun to use)
Preheat oven to 400. Lightly grease mini muffin tin. In a large bowl beat
eggs, then mix in sugar, oil and pumpkin. In a medium bowl mix together all
dry ingredients, add to pumpkin mixture, mix well. Fold in chocolate chips.
Spoon into mini muffin tin. Bake for 10 minutes. ENJOY!!
*I like to use 1/2 whole wheat flour and 1/2 white flour

Bread Sticks

24 Rhodes dinner rolls
/2 cup butter, melted
1/2 cup parmesan cheese
Garlic salt

Pour melted butter in 13x9 pan and sprinkle bottom of pan with parmesan cheese and garlic salt. Unthaw rolls according to directions on the package. (or put in microwave and defrost for a minute or so) Roll unthawed roll to about 6 inches. Place in pan, after all the rolls are done, brush with more melted butter and sprinkle parmesan cheese and garlic salt. Cover and let rise until they are doubled in size. Bake at 350 for 20 minutes or until golden brown.

Pie Crust

1 1/4 cup flour
1/4 tsp salt
1/3 shortening
4-5 tbsp water

Mix all together and roll out.

Chicken pot pie

2 can cream of chicken soup with herbs
1 cup cooked chicken
1 pkg frozen veggies- thawed
pie crust
1 cup milk

Mix soups, veggies, chicken, and milk together. Layer pie pan and dump mixture onto pie crust. Cover the top with pie crust. Cook at 400 for 30 minutes. Its really easy to make. I rather use fresher veggies then the frozen kind but its up to you.

Tortilla Soup

1 lb hamburger
1 can mexi-corn
1 can black beans
1 can hot tomato sauce-optional
1 large can of tomato juice (46 oz)
1 bag small eggshell noodles
1 cup salsa
Cook hamburger, drain the fat. I usually rinse off the corn and beans. Add corn, beans, tomato sauces to the hamburger. I let it simmer for about 20 minutes before I add the noodles. I also don't cook the noodles all the way, if they get to soft they fall apart. I add pepper, garlic powder, seasoning salt just to your taste. Sometimes the noodles suck up the juice so just add some water. Serve with tortilla chips, cilantro, sour cream, and cheese.

Caramelized Baked Chicken

The sauce for this recipe is amazing! It is one of our favorites! You will love it!

1 Pound Chicken
2 T Olive Oil
1/2 cup soy sauce
2 T Ketchup
1 c Honey
1 t minced garlic
salt and pepper to taste

Add ingredients in saucepan and heat until it is blended. Pour over chicken (its about 4 pieces and I even sprinkle the chicken with a little bit of garlic salt with parsley) in 9x13 pan. Cook at 375 for an hour basting every 15 minutes. (It says an hour but mine was done in about 30 minutes, so just check on it.)

I serve it with white rice and steamed veggies. I cut the chicken up and just drizzle the sauce on top of the chicken and rice. I even put the extra sauce in a bowl for us to dip our chicken in... we just can't get enough! The best part of this recipe is that my kids love it! ~Alyssa

Baked Spaghetti

This is Craig's families favorite. Its a nice variation to spaghetti.

6 to 12 oz package spaghetti
1 pound bacon
1 green pepper
1 onion
2 cans tomato soup & 1/2 can of water
grated Parmesan cheese

Fry bacon, then fry onion and green pepper in the grease until tender. Add peppers, onion and broken bacon to the cooked, drained spaghetti. Mix the soup in and place in casserole dish. (Since it makes alot, I divide it and freeze half for later.) Sprinkle heavily with Parmesan cheese.
Bake at 400 for 45 minutes. Serve with garlic bread and salad. ~Alyssa

Taco Soup

Here is a quick and super easy delicious recipe. It makes a ton but it is great for leftovers.

1 pound ground beef
1 can corn (I use 2)
1 can sliced olives (I use 2)
3 small cans or 1 large can stewed tomatoes
1 can tomato soup
1 can red kidney beans
2 packages taco seasoning (I use 3)

Brown the ground beef and drain grease. Add everything together. You can add more or less to taste and desired consistency. I think I may add a can of water.

I serve it with Frito Scoops on top. I also put cheese and sour cream on the top. So easy and so good! ~Alyssa

HELP

Okay girls im trying to figure out something that will be a little more helpful to look up recipes. During work I often blog stalk and I have found other people doing recipe blogs. But some how they set a side all the previous recipe post on the side. I thought that was a great idea and it will be easy to look up any recipes.
This is my example to help me explain:
Main dishes(3)
Desserts (5)
Appetizers (2)
Well you get the idea. But when you click on main dishes it will show all the recipes we have posted. Fantastic!!

But thats the problem i dont know how to do it. I know its under labels ( i think) but if anyone knows how let me know!!
